DINNER FOR 6 ON A BUDGET

After Xmas and related festivities, another important day is Valentine's day, for romantic couple where sometimes men try to cook for his other half, other choose a table in a fancy restaurant and other prefer spend that day with other couple, so this is a nice Valentine's menu for  6 persons to host at home keepin on the budget (The total is €25)!!!

Menu

  • Rustic cake with potatoes and cheese
  • Breaded cutlets with corn flakes
  • Bavarian Pineapple
One thing that I liked about this receipes, is that are made with products that usually are already inside your kitchen, so this means that you will don't overbuy and overspend on food...


RUSTIC CAKE:

  • 310 g flour
  • 100 g butter
  • 4 potatoes 
  • 3 onions
  • 200 g emmentaler cheese
  • 200 ml cream milk
  • 1 egg + 1 yolk
  • 2 tablespoon of olive oil
  • salt & pepper
Cut the butter into small pieces and knead with 300 g of flour and egg yolk, adding a little at a time 1/2 cup of cold water. Work quickly to obtain ina soft texture, then formed a ball, wrap in plastic wrap and put it in the refrigerator for about an hour.
Roll out the pastry crust on a plane with the remaining flour roll out not too thin with a rolling pin.
Peel the potatoes and cut into slices not too thin. Qindi boil them in salted water for 10 minutes, then drain. Grated Emmentaler, peeled and chopped onions and let them dry in a pan with olive oil. So a round baking pan lined with a sheet of baking paper, lie the pastry crust and make holes with a fork.

Cover the surface of the crust with the onions, then Emmentaler and finally potatoes. In a bowl, beat the egg with the cream, salt and pepper and pour over the potatoes. 
Put rustic pie in a preheated oven at 180 degrees and bake for about 40 minutes. Let cool and serve.



BREADED CUTLETS WITH CORN FLAKES

  • 6 chicken breasts
  • 6 spoons of corn flakes without sugar
  • 60 g gruyère cheese
  • 16 walnuts
  • 2 eggs
  • 2 spoons of flour
  • 2 spoon olive oil
  • salt & pepper

Crumble the cornflakes, finely chopped nuts in a dish and grated Gruyère, add the nuts and corn flakes. 
In another dish, beat the eggs and add the pepper.
Pass the chicken breasts first in flour, then egg and finally in breadcrumbs enriched, pressing with your fingers to make it stick evenly. 
Im a frying pan heat the oil and fry the meat for 5 minutes on each side. 
Drain on paper towels, season with salt and serve hot.

n.b:I suggest to add a green side with fresh salad and if you don't want to have fried chicken you can cook it on the oven. Taste always good!!!


BAVARIAN PINEAPPLE:

  • 200 ml fresh milk cream
  • 300 g pineapple
  • 240 g sugar
  • 2 egg yolks
  • 3 sheets of gelatin (or is more correct jelly?honestly i'm not sure about it)
  • 1/2 spoons of lemon juice
  • salt
  • vanillin
Let it soak in gelatine leaves in a bowl with cold water, then squeeze. 
Chop the pineapple, put in a saucepan with lozuccher, lemon juice, egg yolks, vanilla extract a pinch of salt and finally the gelatin. 
Cook over low heat for 10 minutes, turn off the heat and let cool.
Whip the cream and gently amalgametela to the mixture of pineapple. 
Distribute all in 6 individual ramekins, and then harden in the refrigerator for at least 3 hours. Remove the cream from the fridge before serving. Serve on dessert plates and arrange on top of a slice of pineapple and garnish with fresh cream.
