QUINOA SALAD BY SANDRA LEE

Do you have bought  a ton of food and now you aren't able to finish it, well this is a good excuse to organize a dinner using your ready & packaged meal/ingredients with fresh items, maybe you bought a lot of food for the fact that magazine and news said that they were healty but now you don't know how to use. for example quinoa is good for a healty salad, during summer a great dish is Pasta's salad, well why don't swap normal pasta with quinoa?
I like a lot italian food, with his mediterrean diet, rich of veggies, fruits, fish and more,hei I'm  italian and I like my country :P
However my friend Natalya gives me a great cookbook (to be honest is gift for me from her mother in law Connie), SEMI-HOMEMADE Fast-fix Family favourite by Sandra Lee, it is a cookbook rich of receipes from all over the world.
Followuing the etiquette the perfect number of guest in a dinner is 8 but you can invite more or less, you are the boss, the only thing is that you must to have a clear plan and good organization.
MAke a plan of dinners you are going to organize, guest, food preferences and allergies and decide for menu ahed.

Prepare some crostini and or bruschetta, you need to toast bread and thenyou add oil, tomato in little cubes or cheese cream (as philadelphia), it is always a good point to start and believe me bruschetta and crostini is good fo every guest!!!
The following receipe is from food and some brands  food andhonestly for me are unknow so I decided to don't copy their name, but you are free to chose your favourite brand or not.

QUINOA SALAD:( makes 6 servings) 

you need:
2 cup organic chicken or vegetable broth 
1 cup of quino
1 cup seeded and chopped cucumber
1/2 cup chopped roaste red bell peppers,
1/2 cup crumbled feta cheese, Athenos
1/4 cup finley chopped flat-leaf parsley
2 scallions  (green onions), sliced
3 tablespoon slivered almond,toasted 
1 tablespoon fines herbs
9 cup bibb lettuce leaves, torn
174 cup light roasted garlic and balsamic salad dressing

In a medium sausepan, combine chicken broth aand quino, bring to boil; reduce the heat, cover and simmer for 10 to 15minutes or until liquid is absorbed. Spread quinoa on a foil-line baking sheet; cool.
In a large bowl, combine cooled quinoa, cucumber, roasted peppers, feta cheese, parsley, scallions, almonds and fine herbs. Toss to mix, toss lettuce with quinoa mixture, divide among 6 chilled salad plate. Drizzle with salad dressing


Prepare different kind of salads, every guest will eat and willa sk you the receipe, is better to prepare one of 2 main dish that several plate, honestly I like one-dish meal but it must to be colourful, healty and taste delicious!!!
